Dress it Up

The school cafeteria can get old REALLY FAST! No?! Remember in elementary school when you would have about 2 choices to choose from each day. Monday’s option: Chicken Fried Steak or Pizza? Haha Thankfully, the options branch out a little bit as we grow up. However, after a few weeks of sifting through the choices at the dining hall, I am yearning for a kitchen so I can cook my own meals! Unfortunately, that is not an option; so let’s reach for the one thing in the dining hall that you can personalize into a different combo with each day (Make your very own Monday Special!).
If the dining hall offers a salad bar, make liberal use of it. Most college students are eating on the go, which generally implies…granola bars, chips, etc. So when you have time for a sit down meal, make it a substantial one.
Stock your salad with a wide array of colorful veggies and protein in the form of nuts, chicken and eggs (nature’s nutritional power house). Cheese can add a bit of umph; but it is probably not low fat, so keep the serving minimal.
Next up is the dressing. At my school, the salad bar is NOT serve yourself; which I am working hard to change (YES, email your housing/dining department with requests. It may take you farther than you expect!).
After having a number of salads drenched in dressing by a not-so-health conscious student employee, I began to bring my own. I recently found Kraft Single Serve Dressing packets and they are awesome! (Check them out here). However, if you have a favorite dressing of your own, perhaps you should consider investing in one of these?!
